Meat


Olsen Farms offers naturally and sustainably raised beef, pork and lamb throughout the year.

Our farm is in an isolated valley north of Colville, WA in the beautiful Selkirk Mountains. Our Angus and Angus/cross cattle are raised on green grass pastures and are fed our hay and potatoes in the winter. We feed the cows only what we grow on the farm, no outside food sources or animal by-products.  Our pigs are fed barley grown just across the road from where they live and our lambs are moved throughout the region to remain on pasture year-round.

Animal welfare is a priority for us. Shelter, water and food are always provided. Our animals are naturally raised without the use of hormones or antibiotics. The animals raised on our pasture live low stress lives.  Meat from pastured animals offers more "good fats" and fewer "bad fats" (saturated fats). It is also reported that that meat from grass fed beef is richer in antioxidants and has two to four times more omega-3 fatty acids (good fats) than grain-finished animals.



All of our meat is processed by our own USDA inspected business, Smoke Ridge Meats, located in Chewelah.  Smokey Ridge is managed by Doreen Nelson, who started the business in the mid 90's and takes great care in producing the highest quality meats possible.  Doreen has developed the recipes for all of our sausages, jerky and other smoked meats.

Wholes, Halves and Quarters

Olsen Farms also offers the option to buy whole or half animals.  Beef is also available by the quarter animal. Bulk orders of beef and pork are priced by the pound based on "hanging weight," which refers to the weight of the animal as it hangs in the meat cooler with its usable cuts still intact. Prices include custom cut and wrap, sales tax, transportation and delivery. Some customers choose to split a whole animal between 3 or 4 households. BEEF
